Colours

Fall is a marvelous season where we get to enjoy nature’s process of turning trees into masterpieces of vivid colours. There are many foods God has provided that allow us to also produce our own colourful masterpieces that not only look great, but taste good as well.

I like adding grated carrots in with my mixed greens, and then I pile on the different coloured peppers, cucumber, strawberries, mandarin oranges and blueberries, cranberries, topped with some feta or cheddar cheese.

For those of you low in iron or constipated a great salad is the roasted beet, apple, feta, and walnut salad. My husband doesn’t like beets, but he doesn’t mind the roasted ones. I often prepare in advance roasting 10 lbs. of beets at a time, and then put the peeled, cubed beets in Ziploc bags and freeze them for future use. They also make a great side dish on their own.

For those who need help with balancing hormones, a wonderful salad is roasted sweet potato with pineapple, celery and cranberries. (I soak the cranberries in hot water before hand to plump them up) I make sure to keep lemons and a good olive oil handy which is the base to many of the dressings.

I find most my recipes by going on line and putting in the ingredients. Up will come several recipes to choose from, and you can mix and match between them.
